BBQ Chicken Burgers with Sweet and Spicy Slaw
1 lb. ground chicken or turkey breast
3/4 tsp. red-pepper sauce
1/2 cup soft bread crumbs
1 1/2 cup bagged slaw mix
1/3 cup minced scallions
1 ripe peach, cut into cubes
1/3 cup barbecue sauce
2 tbsp. low-fat mayonnaise
1 tsp. minced garlic
2 tsp. cider vinegar
1 tsp. chili powder
4 hamburger buns
1/2 tsp. salt
 
Combine chicken, bread crumbs, 1/4 cup scallions, 1/4 cup barbecue sauce, garlic,
chili powder, salt and 1/2 teaspoon red pepper sauce.  Form into four 1/2 inch thick
patties.  Place on a plate lined with wax paper and refrigerate.

Coat rack with cooking spray.  Preheat grill to medium-hot.

Toss slaw mix, peaches, mayo, vinegar, remaining scallions, and remaining red
pepper sauce until blended.

Grill burgers about 12 minutes, turning once, until a meat thermometer inserted in
centers registers 165 degrees.  Grill buns 1 minute, or until toasted.

Place burgers on bun bottoms.  Top with slaw, and drizzle with remaining barbecue
sauce.  Cover with bun tops.

Makes 4 servings.

Per serving:  385 calories, 26 grams protein, 33 grams carbohydrates, 16 grams fat,
5 grams saturated fat, 100 milligrams cholesterol, 3 grams fiber, 1,024 milligrams of
sodium.
